The Shun Ken Onion Series knives share the same premium materials (VG10 super-steel and PakkaWood handles) and beautiful suminagashi blade pattern as the Shun Classic line. What’s different with this Hollow Ground Santoku are the curves…the handle is curved to neatly nestle into the natural contours of your hand. The belly of the blade is curved to reduce cutting fatigue and provide extreme cutting versatility. The wider bolster with contour curved thumb and forefinger rests reduces tension during cutting. This design provides relief when doing large amounts of prep work and also makes the knife a pleasure to use for both right and left-handed chefs. The Santoku style knife is similar to a Chef’s knife and is your go-to knife for everyday cutting tasks. Made in the ancient city of Seki, Japan, Shun knives rely on extremely sharp blades, made of Japanese VG10 steel clad with 32 layers (16 on each side) of a proprietary blend of high-carbon stainless pounded so thin, it delivers precision slicing, cutting and chopping that is unprecedented by any of its German competitors. Manufactured in the style of ancient Samurai swords, Shun is sharper out of the box than other knives and maintains that sharpness longer. Both the wavy, Damascus pattern on the blade and the hollow ground “dimples” allow foods to release easier for faster preparation. NSF approved for commercial kitchens and Shun provides free sharpening for the life of the knife. Includes bamboo stand for storage.

I love it, I do a lot of mince, shop on different spices and vegetables and with Santoku is a pleasure to do it ; and looks so elegant on his stand.
