"Set of 3 Glace de Fruits de Mer Gold, a classic Seafood stock, reduced to a glace, is a premium blend of the finest ""fruits of the sea,"" lobster, shrimp, crab and fish. Imagine a perfect, natural lobster reduction to a glace, typically prepared painstakingly by hand only in the finest gourmet restaurants in Europe. Now, youll be able to depend upon this same consistent, highly-reduced seafood glace to add tremendous, sweet flavors to your sauces, stocks and soups. You will enjoy Glace de Fruits de Mer Golds beautiful red hue that of course is achieved naturally, with no added coloring. Sauce for Pan Seared or Grilled Fish 4 T. (60 mL) Butter 1 c. (250 mL) Cream (Double or Single) 1½ oz. (45 g) Glace de Fruits de Mer Gold® 2 T. (30 mL) Basil Pesto 1 T. (15 mL) Fresh Lemon Juice 1 oz. (30 g) Parmesan Cheese In a sauce pan on medium high heat, add the butter and melt. Add the cream and Glace de Fruits de Mer Gold® and whisk until blended. Simmer the sauce, whisking until slightly reduced (by about ¼). Add the basil pesto, lemon juice and Parmesan cheese and whisk until thoroughly blended. Remove from heat and serve. This sauce is excellent as an addition to any pan-seared, oven baked or grilled white fish fillets."
